Ingredients:
- 2½ cups cold-cooked rice
- 2 tablespoons Mama’s Chili Oil (adjust to spice level)
- 3 large eggs
- 2 tablespoon of butter
- 3 stalks green onion (separate whites and greens)
- 4 large eggs
- 2 tablespoon Four Season Scallion Sauce
- 1 tablespoon Golden Shallot Oil
Instructions:
- Separate the egg yolks and egg whites.
- Add the egg yolk, 1 tablespoon of Mama’s Chili Oil, 2 tablespoons of Four Season Scallion Sauce, and 1 tablespoon of Golden Shallot Oil to cold, cooked, day-old rice, mix well to ensure every grain of rice is coated in the egg yolk and sauce.
- Add 2 tablespoons of butter and 1 tablespoon of Mama’s Chili Oil to a pan. Turn the heat up to medium and add minced white parts of the green onion. Sauté for 30 seconds.
- Push everything to the side, and add beaten egg whites.
- Let the egg whites sit for 20 seconds before scrambling.
- Next, add the rice and sauté on high heat for 2 to 3 minutes.
- Finally, add the rest of the green onion and sauté on high heat for 1 to 2 minutes.
