Dan Dan Mac & Cheese

Dan Dan Noodles is a spicy, nutty, and creamy noodle dish from Sichuan, and has become popular and widely enjoyed across Taiwan. Many local vendors have their own variation! INSTRUCTIONS

Ingredients:

Dan Dan Pork Topping

Dan Dan Sauce

  • 1 tbsp sesame paste
  • 1 ½ tbsp Four Season Scallion Sauce
  • 1 tsp sugar
  • sprinkle of five spice powder
  • 2 tbsp Mama’s Chili Oil
  • 2 cloves garlic, very finely minced
  • ¼ cup reserved pasta water

Mac & Cheese

  • 1 pound cavatappi
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 cup milk, any kind (I used 2%)
  • 1¼ cups heavy whipping cream
  • 2 cups shredded sharp white cheddar cheese

  1. In a pan on medium heat, add Everyday Garlic Oil and brown the ground pork. Add hoisin sauce, cooking wine, Four Season Scallion Sauce, and five spice powder. Cook until all the liquid is evaporated. Set aside
  2. To prepare the Dan Dan sauce: Mix together all the sauce ingredients.
  3. For the Mac and cheese: cook the pasta according to package. Save 1/4 cup of reserved pasta water, drain, and set aside. To a large pot, add the butter. Stir in flour to make a roux and cook for 1-2 minutes. Add milk and turn the heat to low. Allow it to simmer and thicken. Season with salt and pepper, and once it is thickened, turn off the heat and add your grated cheese. Mix in half the dan dan sauce into the cheese sauce.
  4. Mix the remaining sauce into the pork mixture.
  5. Put the Mac and cheese in a baking dish and top off with the pork mixture. Bake for 5 minutes and garnish with scallion. Enjoy!
