Celebrate Leap Day with These 4 Dishes

As we celebrate this extraordinary day, occurring just once every four years, we’re thrilled to share 4 mouthwatering recipes with you. Get ready to infuse your Leap Day with flavor and fun – let’s make some delicious memories together!

 

Honey Soy Glazed Carrots


Crunchy and slightly sweet, these carrots are the perfect appetizer for a Leap Day meal! Not only are they super easy to make, but they’re also packed with nutrients such as beta carotene and antioxidants. It’s a great way to get your partner or kids to eat more vegetables!


Ingredients:

  • 500 g carrots peeled
  • 4 tbsp of honey
  • 2 tbsp Four Season Scallion Sauce
  • 0.5 tbsp of red chili flakes (optional)
  • 2 tbsp of butter


Instructions:

  1. Fill a pot with water, and season with salt (around 0.5 tablespoons); once the water is boiling, add in the carrots and blanch for 3 minutes. Rest in ice water.
  2. Add honey, Four Season Scallion Sauce, red chili flakes if desired, and butter. Turn the heat to medium-high and bring it to a simmer.
  3. Simmer for 2 minutes and add back in the carrots. Sauté on high heat for another 2 minutes.


Taiwanese Chow Mein

If you’re looking for a original Taiwanese chow mein recipe that's tangy, savory, and seriously addicting, look no further! Passed down from our founder Tiffy’s grandmother, this secret recipe will transport you right to the vibrant and aromatic streets of Taiwan!


Ingredients:

  • 320 g of Sun Dried QQ Noodles ~4 servings
  • 250 g of sliced pork shoulder, pork belly or, pork butt
  • 3 green onion chopped into 2-inch pieces
  • 4 cups of cabbage sliced
  • 1 cup of carrots shredded
  • 2 cups of shiitake mushroom sliced
  • 3 small shallots minced
  • ¼ cup of dehydrated shrimp rinsed (optional)
  • 0.5 cup of water

Pork Marinade:

  • 1.5 tbsp of Four Season Scallion Sauce
  • 1 tsp of white pepper
  • 1 tsp of sugar
  • 2 tbsp of Chinese cooking wine (optional)

Chow Mein Sauce:

  • 2 tbsp of Four Season Scallion Sauce
  • 2.5 tbsp of oyster sauce
  • 3 tbsp of black vinegar
  • 2 tsp of sugar
  • 1 tsp of white pepper


Instructions:

  1. Marinate the sliced pork with Four Season Scallion sauce, white pepper, sugar, and Chinese cooking wine (optional) for 5-10 minutes.
  2. To prepare the sauce, mix Four Season Scallion sauce, oyster sauce, sugar, white pepper, and black vinegar.
  3. In a pan, drizzle in a generous amount of oil and turn the heat to medium-high. Once the pan is hot, add in sliced shallots, sliced shiitake mushrooms, and dehydrated shrimp. Sauté for 2-3 minutes.
  4. Next, add in pork and sauté for another 2-3 minutes.
  5. Add in the sliced cabbage and shredded carrot, and mix. Pour in 0.5 cups of water and put the lid on, and let it cook for 2-3 minutes.
  6. Add in the noodles, pour in the sauce, mix everything. Put the lid on and let it cook for another 2-3 minutes.
  7. Add in green onion, turn the heat up to high, sauté on high heat for another 1-2 minutes.

Hot & Sour Soup (V)

A classic dish in Chinese cuisine, hot & sour soup is one of the easiest and tastiest soups to make at home–only takes 15 minutes! We’re sharing a vegetarian version today, but feel free to add any protein of your choice, such as chicken or pork!

Ingredients:

  • 6 shiitake mushroom sliced
  • 1/2 carrot cut into thin pieces
  • 1 pack of tofu cut into thin strips
  • 1/2 cup of sliced bamboo shoots
  • 2 eggs beaten
  • 5 cups of vegetable stock
  • 2 tbsp of corn starch mixed w/ 4 tbsp of cold water

    Sauce:
  • 3 tbsp of Four Season Scallion Sauce
  • 4 tbsp of black vinegar
  • 3 tsp of white pepper or more if you like it spicy
  • 1 tsp of sugar

Instructions:

Sauce: mix Four Season Scallion sauce, black vinegar, white pepper, and sugar. If you like it spicier, you can add in more white pepper. If you like it sourer, then add in more black vinegar.

  1. In a large pot, add in vegetable stock sliced carrots, sliced mushrooms, and sliced bamboo. Bring it to a simmer, and let it cook for 3-4 minutes.
  2. Gently add in sliced tofu and let it cook for another 2-3 minutes. Pour in the sauce and let it cook for 1-2 minutes.
  3. Beat two eggs and season with salt and pepper.
  4. Mix 2 tbsp of corn starch with 4 tbsp of cold water.
  5. Add the corn starch mixture into the pot and cook for 1-2 minutes or until the stock thickens.
  6. Turn the heat down to low, and drizzle in the egg mixture. Let the eggs sit for 30 seconds before mixing everything.
  7. Garnish with cilantro and enjoy!

 

Air Fryer Miso Glazed Salmon

Tender salmon coated in a savory umami miso sauce, this air fried miso glazed salmon is a must-try dish. Using an air fryer ensures even cooking at a consistent temperature, promising perfection with every bite!

Ingredients:

  • 2 pieces of salmon with the skin on, around 5-7 oz each
  • 1.5 tbsp white miso paste
  • 1 tbsp mirin or honey
  • 1 tbsp Four Season Scallion Sauce
  • 0.5 tbsp dashi powder
  • A pinch of black pepper
  • 3 tbsp Japanese Mayo

Instructions:

  1. First, mix Japanese mayo, Four Season Scallion sauce, miso paste, mirin, dashi powder, and black pepper together.
  2. Coat the top of the salmon with the mayo mixture (not the side with the skin), marinate for 30 minutes or overnight
  3. Line the air fryer with parchment paper, or spray it with oil. Place the salmon skin side facing down.
  4. Air fry at 400F for 10-11 minutes. ENJOY!
