Super Onion Noodles

Super Onion Noodles is an onion-forward noodle soup utilizing a variety of onions along with leek and scallion, simmered for half an hour. With each kind of onion, it develops layers of different flavors. You get a light, yet sweet broth, and seasoned with Four Season Scallion Sauce and sesame oil. 

 

 

Instructions:

  1. Roast the assortment of onions in the oven at 425 degrees F until slightly charred.
  2. Add roasted onions, along with leek and scallion to a pot and cover with water. Boil for about 30 min, the longer you do it, the more flavor you’ll get out. 
  3. Cook kai dong noodles according to package. Drain the noodles.
  4. Discard the onion, leek, and scallion from the broth. 
  5. In a bowl, add Four Season Scallion Sauce and sesame oil. Add in cooked noodles, pour in onion broth, and top with more sliced scallion. Enjoy!
