Taiwanese Beef Rolls

It’s no secret that Taiwan is home to some of the most iconic street foods. Case in point: Taiwanese beef rolls. The best ones have perfectly crisp yet chewy pancakes, tender slices of beef, a rich hoisin sauce to bring it all together, and just the right crunch from fresh green onion and cucumber.

INSTRUCTIONS
  1. Place the beef shanks in a pot along with ginger, sugar, cinnamon, star anise, cloves, peppercorn, garlic, scallion, cooking wine, and Four Season Scallion Sauce. Cover with water until the beef is submerged.
  2. Bring to a boil, then reduce the heat to a simmer. Cover and simmer for 2 hours, or until it is tender, but still firm. Cool completely, then thinly slice.
  3. To assemble, mix hoisin sauce + Golden Shallot Oil, spread it on the scallion pancakes, and add beef, scallion, and cucumber. Tuck and roll tightly, and slice the roll in half. Enjoy!
