Creamy Tomato Feta Pasta

Picture a block of golden brown melty feta surrounded by juicy tomatoes roasted until they are bursting. When blended, it becomes a creamy, sweet and bright sauce. Mix it with our hand cut noodles and you get an easy weeknight dinner! 

INSTRUCTIONS
  1. Preheat the oven to 400°. In a large baking dish, place the block of feta at the center. Add tomatoes, shallot, garlic, olive oil, and thyme. Season with salt and pepper.
  2. Bake for 40 to 45 minutes, until tomatoes are bursting and the feta is golden on top. 
  3. Cook kai dong hand cut noodles according to package directions. Reserve 1 cup of water before draining.
  4. To a blender, add all ingredients and slowly add in reserved water to desired consistency. Blend until smooth and mix in with noodles. Garnish with basil and enjoy.
