Picture a block of golden brown melty feta surrounded by juicy tomatoes roasted until they’re bursting. When blended, it becomes a creamy, sweet and bright sauce. Mix it with our hand cut noodles and you get an easy weeknight dinner!
Instructions:
- Preheat the oven to 400°. In a large baking dish, place the block of feta at the center. Add tomatoes, shallot, garlic, olive oil, and thyme. Season with salt and pepper.
- Bake for 40 to 45 minutes, until tomatoes are bursting and the feta is golden on top.
- Cook kai dong hand cut noodles according to package directions. Reserve 1 cup of water before draining.
- To a blender, add all ingredients and slowly add in reserved water to desired consistency. Blend until smooth and mix in with noodles. Garnish with basil and enjoy.
